Be the talk of the table this year with Alice's fall inspired Mixed Herbs, Pomegranate and Lentil Salad with Creamy Cashew Dressing! The perfect salad to make for Friendsgiving!
2 cups of chopped herbs: mostly parsley, basil, some sage and dill
4 endives chopped into medium pieces
1/4 cup of red onion chopped
1/4 cup cooked lentils
1/4 cup pomegranate seeds
1/4 cup raw or roasted walnuts or pistachios
1/2 cup of feta or vegan feta (we LOVE Violife Vegan Feta)
1/4 cup of green apple chopped in medium pieces
For the dressing, in a blender:
1 tbsp dijon mustard
1/4 cup of strawberry vinegar
1 cup of extra virgin olive oil
6-8 whole cashews
1 tbsp maple syrup
Top with 1/4 cup pomegranate seeds!
